BillMy name’s Bill, and my taste buds haven’t always been paved with asphalt.

My wife, daughter, and I live in southern New Jersey, although my tastes have been cultivated by a life on the road. My first encounter with the fire occurred at a chili cookoff at the Astrodome in Houston Texas in the mid 70’s. Later my tongue would be honed by exposure to the fierce cuisine of southeast Asia. It didn’t take long before I was hooked.

    Top 5 Hot Sauces:

  • Sontava
  • El Yucateca
  • Predator
  • Tabasco (sometimes you gotta go old school…)
  • Asbirin Extra Strength Hot Sauce

Hottest Sauce Ever Consumed: That would be Dave’s Insanity Sauce. Death on a spoon. I basically find it inedible. Predator is a pretty hot sauce in its own right, but it doesn’t have the tar-like consistancy of Dave’s. I bring out the Dave’s when a guest starts bragging about what they can handle. Given the size of my collection, that’s saying something.

Number of hot sauces in collection: 147, including a case and a half of Sontava XX and XXX.

Number of hot sauces eaten in your lifetime: Too many to count, really. I’ve conservatively owned well over 1000 bottles of sauce. Can’t say as I finished them all, but I but a dent in them. My addiction has spread to my wife, and then to my parents and in-laws. Still working on my brother, but it looks like he is missing the hot-sauce gene.

Favorite type of sauce: I really enjoy Belizian-style habanero based sauces. I can also get into a good vinegar based cayenne sauce from time to time. I’m easy, just make sure it’s hot.
