1st Annual HSB Wing Off - Entry #6
D- Man’s
Crunchy Smoked Wings
(Belizean Heat Style)
12 whole wings (tips removed)
½ cup bread flour
½ cup corn meal
2 tbs spicy bbq rub (your own or any store bought brand that you like)
2 tsp salt
1 egg
½ cup milk
Dash (or more) Marie Sharp Belizean Heat (or your fav)
Hot Sauce & melted butter
1. Mix dry ingredients
2. Mix wet ingredients
3. Dip wing in wet mix, shake off excess
4. Coat wing in dry mix, shake off excess
5. Repeat process until all wings are coated
6. Refrigerate wings for at least 1 hr to set
7. Build charcoal fire to 225-250 temp
8. Place soaked wood chunks on the charcoal fire (I like hickory or pecan)
9. Place wings on oiled grate & cover cooker
10. After 30 minutes flip wings CAREFULLY so as not to disturb coating
11. After 1 hr flip every 20 min until done (appx. 1.5-2 hrs total)
12. Melt butter on stove in a skillet and add 1-2 tsp of Belizean Heat (or your fav)
13. Toss wings with hot sauce mixture and serve
Crunchy, Smoky, Tender, Juicy AWESOME wings!
