Name That Category: Alright folks, with the onslaught of photos from readers - we need another category. And this time the naming will be up to you.

Some of you may remeber Henry as the guy that out bid you on the #35 B-99 (on eBay) - making him one of the few people that owns both a B-99 reserve and a 2005 Holiday Reserve. The most interesting item in Henry’s collection has to be the Chile North IceHot Sauces - I’ve certainly never seen them around before.

A word from Henry…
I guess the greatest use of Blair’s sauces is as displays for all of my visiting company to view and admire. Along with the questions, why someone would be inclined to save such a commodity. My answer is that everyone has a passion for doing something different than the average person; this is mine. This all started years ago when I served in the US Army, during which time I was introduced to uses for Hot Sauce. Basically, we used Tabasco (it was an issued item) on everything we ate; the reason it changed the great flavor of well known (Military Chow).

After retiring from the service, I used to carry my mini bottle of Tabasco with me to places I consumed food. Over the past years I have grown my own Habanero/Serrano/Thai Peppers and after drying used a blender and make my own shakes of individual named peppers or a combination of these. This was a great experience.

By the way this mixture is great to keep squirrels out of flower beds. (Saves a lot of Hot Sauce).

Then I decided to try the Great Blair’s Hot Sauce; after a few of the bottles I have to become attached to the SUDDEN DEATH, it last forever (just me using), has a great flavor and does well on all the edible dishes that I enjoy.

My collection is primarily of sauces made with Haberano peppers, with the exception when I want a complete set of sauces such as Blair’s. My most prized collection is probably 5 fold: Blair’s Caldera; The Blair’s Reserve AM series; The added LeMillion The Holiday Series (missing Halloween 04).

Lastly I have acquired what I feel is a collectible unlike any other because of the unique bottles that are used, they are shown in photos from “ICEHOT” from Chili North LTD. From left is #001 of 180 the first made in 2000, #003 of 180 of year 2001, #002 of 180 of year 2002, #002 of 360 of year 2003(certificates included) Made only for these 4 years due to the supply of bottle were no longer available. They continued making IceHot with a smaller bottle.

My last one that I am working on is the upcoming CaJohn’s hot sauce collection.

CaJohn's Fatalli PureeThis is the last of the three CaJohn’s Exotic Select Puree’s. The Fatalii Puree. I saved the hottest for last as well as the one I was most anticipating. I have heard of the fatalii and saw that it ranks right up there with the hottest Habaneros. So naturally I was excited.

This is also the last of the 6 CaJohns Select Puree’s and it is my favourite out of the 3 I have tried.
As like all the purees the ingredients and consistency are all the same:

Ingredients: Fatalii Peppers, Distilled Vinegar, Citric Acid & Ascorbic Acid (Vitamin C), to preserve colour.

To be fair I tried this with just flatbread like all the others. As you can see the colouring is bright yellow. By sight and smell alone you couldn’t begin to guess how hot this puree is. It looks unassuming and the aroma is bright and fresh. I put the standard amount on the plate (about a teaspoon worth) that I have for the others, as I thought the heat level would be little hotter than the others but I was in for a quick surprise.

Fatalli Puree on FlatBread

This is the pitbull of the purees. It bites hard and doesn’t let go for quite some time. Not as hot as the Krakatoa I reviewed but I can safely say that this is way up there in terms of how hot a habanero can get.

After about 15 minutes the heat subsided and I was left with the still pleasant taste of the pepper. It almost has a citrus like quality that comes through very nicely and is noticeable if you can get past the heat.

One thing I was thankful for is that as strong as this puree is, it didn’t leave that acrid after taste that the Serrano Puree left me with. Also this was the thinnest in terms of viscosity and the only one I didn’t need a knife to try and get the puree out of the bottle.

Overall this is a fabulous puree. Amazing heat and a taste that is truly original. While it may not be the perfect condiment for everyday use, I can see this being a welcome addition to any collection and an array of hot dishes. Enjoy!

How did you start making hot products?
We (John and Dave) have always shared a passion for all things spicy, especially Buffalo style chicken wings. Our love of wings and desire to create a sauce that was both full of flavor and heat led us to the kitchen, where we spent many hours perfecting our craft. The result of those long hours is an award-winning Suck Creek Wing Sauce, recently voted Chattanooga’s best, which delivers the perfect combination of flavor and spice.

What’s with the name?
The name really came about on a whim. When we entered the Chattanooga Wings Contest we didn’t have anything in mind. They called us back a few days later and said they needed a name ASAP for the advertising. We put our heads together and came up with it post haste as more of a joke than anything. We went on to win the contest and the rest is history.

Suck Creek is a part of the Tennessee River near where we live. My wife hated it, but she doesn’t like hot sauce either so what does she know.

Suck Creek Wing Sauce

Sometimes the most simple packaging is the best & most eye catching. Can you name any other brands that are packaged in a mason jar? I dig it. Clean and simple packaging - letting the sauce shine and show it’s true flavor.

First Taste: Prior to heating, I tasted some of the sauce - straight off the finger. Bold flavor - the aftertaste reminded me of Italian dressing for some reason.

Smell: I gently heated the Suck Creek Sauce and tossed in a couple of Hot Wings. The smell of the sauce still reminds me of Italian salad dressing - must be the margarine/vinegar combo going on.

On Wings: You really don’t have any idea how dirty a keyboard can get when your eating wings as you write a review.

Good news: Suck Creek Wing Sauce doesn’t suck. It’s definately better then plain ole Franks & Butter, but there’s something going on with the margarine in the sauce that caused the seperation you can see in the image above. Heating the sauce did bring it together a bit, but not by much.

The sauce itself has a good balance of flavor despite the seperation & it does stick to the wings (deep fried) very well. The Habaneros provide a decent bite of heat, but they are evenly matched by the remaining ingredients to create a smokey finish for your palate. With a little recipe refinement and a good bit of marketing Suck Creek Wing Sauce could go quite far in the hot wing sauce world. Give it a whirl and send John & Dave your feedback.

Wake Up Your Wings Suck Creek Style
1. Heat sauce in pan over low heat until luke warm. Do not overheat.
2. Prepare chicken wings however you prefer. At Suck Creek Wings we recommend grilling until done and then flash fry to crisp.
3. When wings are done, drop them in the sauce for 3-5 minutes allowing them to soak up the love.
4. Enjoy with a cold beverage of your choice.

Cackalacky Gear Merchandising Program a Success

LOCAL SAUCE COMPANY CREATES “MERCHANDISING” BOOM

CHAPEL HILL, NC – The Cackalacky Classic Condiment Company announced that its revenues are up significantly due to the success of its “Cackalacky Gear” merchandising program.

According to Cackalacky’s president, H. Page Skelton, the company’s merchandising sales “tipped” to nearly twice their gross annual gains during the 2005 fiscal year.

The Cackalacky Classic Condiment Company derives its corporate moniker from a family nickname (pronounce “kak-a-lak-ee”) for the Carolinas. And, according to the company, who also owns the trademark rights to the name, their moniker has an innate marketability – even without their “award winning all-natural sauce flavor.” “People just love to say ‘Cackalacky!” Skelton said.

In previous years, the Chapel Hill sauce company had relegated their Cackalacky-branded hats, shirts, aprons, tote bags, and bumper stickers sales as revenue loss leaders – taking a back seat to their first-in-category spiced condiments. Then, last year, the company decided to conduct a local retail “pilot partnership” with A Southern Season, Chapel Hill’s “landmark gourmet store.” And, according to Skelton, “Everything started to sell like hotcakes! And now, we can’t restock our inventory fast enough.”

More interestingly, though, Cackalacky’s local sales success seems to have triggered residual national sales interest. According to Skelton, because folks in the Chapel Hill-Raleigh-Durham area are a “well-traveled and affluent crowd,” Cackalacky-branded gear and sauce orders come in from all over the country. “We’ve started getting calls from some very big names. We even have a picture of a Cackalacky bumper sticker on the back of a limousine in Manhattan! It’s crazy. Our success is ultimate proof that the key to global marketing is through strong local grassroots support.”

Cackalacky also reports that they are currently “having a quiet discussion” with a major restaurant conglomerate to roll out their “Cacklalacky Place” culinary destination. Skelton said that “The concept promises to invite people to join our Cackalacky Culture and reward them with the ultimate Cackalacky experience. But, even then,” Skelton admits, “we’ll continue to rely on our local extra-Cackalacky supporters as strategic marketing partners. You never forget the people that got you there.”

In addition to A Southern Season, Weaver Street Markets, and Cliff’s Famous Meat Market in Chapel Hill, Cackalacky Classic Condiments are also available at all Earth Fare, Whole Foods, Cracker Barrel Country Stores throughout the Triangle.
