When you boil the meat, you absolutely NEED the sauce because boiling them makes the meat taste bland. Coming from Texas, I gotta say. While many of my friends here in Germany(from different parts of the states) boil their meat, I cant do it. I still eat them if they are prepared that way with a whole troth of sauce to save the flavor but to let the seasoning and sauce cook throughout the meat during the entire time of slow cooking-now THAT'S how you cook 'em.
