For example, neither the review writer nor the tasters should know what sauce was being reviewed until revealed by a third party. So, for example, your wife/gf would de-label and number the bottles for each reviewer, and record which bottle was which, and then distribute them to the reviewers. Its overkill, but it prevents bias. I'd also include a "control" sauce to review as well, like Tabasco, to see if the hot sauce is better than the run of the mill sauce.
