Nick’s No Name Chili

No name chili because I’ve never named it. It’s just the basic chili that I’ve learned to make over the years. Here’s the general recipe, I’ve never wrote it down, it just sort of happens.

No Name Chili Recipe:

2-3lbs of beef (cubed)
1 white onion, chopped up
1/2 head of garlic chopped uo
3-5 Habaneros - Red Savinas if you got em
Salt
1 Can tomato sauce
Cayenne Powder
Cumin
Chili Powder
Water
1 Can Kidney Beans
1 Can Black Beans

Toppings:

Sour Cream
Green Onions
Shredded cheddar

Step 1: Prep

Cubed Beef
Cube your beef.

Peppers and Onions
Chop up your habaneros, onions and garlic. Saute till soft.

Step 2: Saute

Cooking Beef and Onion
Add the beef to the pan, cook till browned.

Step 3: Cook & Boil

Cooked Beef
Once the beef is browned, add water, tomato sauce and seasonings.

Tomato Sauce

Step 4: Slow Cook

cooked Chili

With Beans
Add a bit more water and slow cook 1-2 hours. Add beans 45 minutes before chili is done.

Step 5: Finished Chili

Finished Chili
Here’s the finished product. Not too thick, not too runny and with plenty of heat.

Glad to see chili being done the right way. None of that Cincinatti spaghetti nonsense.

The right way? Insert “real chili does not have beans!” comment here. Thank goodness it’s almost lunch time after that last pic.

OK …. I would say that the bean issue is a hot point among chili lovers. Personally, I could go either way. I like the ranch style beans, myself. However, I just don’t like the whole cincinatti chili with cinnamon and allspice, over spaghetti …. thing.

My mouth is drooling. Do you have a guesstimate on how much Chili Powder, Cumin, and Cayenne you used?

Sean - Nope, I make this by taste. You could start 1-2 tsp of each (more on the chile powder)

Beans?. Sacrilege! LOL….I do the same thing on the measurements. I change it every time in pursuit of the best bowl of chili ever. MMMMMMMMMMMMMMMMMMMMMMMM….CHILI!
