On an especially rainy Sunday, I braved a downpour (7.5 inches in Manhattan - the most rain since 1892!) to run up to the local Whole Foods market and grab the necessities for a good bowl of chili. I didn’t take a recipe with me, nor a list of items to pick up - I simply knew that I couldn’t buy anymore then what I could carry whilst trying to keep an umbrella over my head during the walk back to our apartment. Afterall, the food would have to stay sort of dry, right?
Anyways, I knew I wanted to make a big batch of chili, so that Laura & I wouldn’t have to cook much during the week, hence the 5lbs of meat that went into this chili.
Ingredients:
3lbs Beef Rib Roast - cubed
2lbs Ground Pork
1 bottle Dos Equis Amber Beer
1 While Onion - diced
6 cloves garlic - minced
1 16oz can of diced tomatoes
1 8oz can of tomato paste
1 package bacon (for the grease & to use as a garnish)
1/2 Jar of Art of Chipotle Gourmet Chipotle Paste
2 tbsp ground cumin
2 tbsp chili powder
salt & pepper to taste
(Total cost of ingredients: $23 - but I did have the garlic, chipotle paste and spices on hand)

The Final Product: Nick’s Nor’easter Chili

Cook the bacon & perserve the grease - set bacon aside to use as a garnish later

Garlic: Dave’s Smokin’ Smoked Garlic

Dice garlic and onions - set aside until bacon is cooked.

Saute the diced onions & garlic in the bacon grease until golden - remove and set aside for later


Cube the beef into 1/2 cubes


Cook the meats in batches, using the same pot used for the bacon & the veggies. Make sure to preserve all of the juices from cooknig the meat

Once all the meat is cooked, put it all back in the pot along with the onions & garlic

Add the tomatos & tomato paste - Add cumin & chile powder to taste

I added a beer to the chili because I didn’t preserve all of the meat juices - you can skip this step if you feel that your chili has enough liquidity to it

Why mess around with jarred chipotle in adobe sauce whne you can get it all with Art of Chipotles Gourmet Paste? This is a fantastic paste that could be the secret to your next batch of chili - definately give it a try.

Once you get all of the ingredients in the pot, stir it up and let simmer for 2-3 hours or until the beef cubes are tender enough to almost melt in your mouth. Add salt and pepper towards the end of the cooking process if needed. Garnish a bowl of this Nor’easter chili with the crumbled bacon made earlier and enjoy!

A rare rainy drab day here in Phoenix also. Perfect chili weather. All the chili I have seen here on the HSB looks good, BUT, I always have to add cilantro and chorizo to my chili. Might as well cash in on a rainy day and make some chili here.

The Nor’easter was an overrated event. Media is doing Long Islanders harm because when a major hurricane comes here nobody will evacuate and it will be worse than Katrina.

I don’t know GN, over by us we had swells over 10 feet and the two neighboring towns were deamed catastrophic and believe me, I’m sitting in hours of traffic daily because of the flooding and damage. Glad you didnt get too much where you are.

Yeah we didn’t. I know the coastal flooding was bad in many regions. Here too on Long Island it was bad. However, it will be alot worse when a cat.3+ comes here. Majority of people won’t evacuate. I am in the process of getting certified by American Red Cross to run Evacuation Shelters. I am then going to go for Senior Membership.

Steak & ground beef. **NO** cinnamon by choice… and no beer, not by choice
Probably some pasta though, as I need to feed almost 20 people cheaply.
Jim- LexFD uses sawdust to stretch the meatloaf…it might work with chili.

I don’t know about over-rated. Hell we had almost 14 inches of rain in 2 days.
