This seems to be the industry standard- excpet for CaJohn, Cheffy, and Huvason ;-) It is unlikely the stuff went active again- by the time it is bottled most of the active fermentation is done. What little remains is killed off by the high salt. I've a 'mash education' page on my site that explains this a bit more in detail.
