Even so called 100% Pure Wasabi paste has some additives to keep the product stable. This is true even if the product is frozen. Why is this? Because as soon as you damage the cell walls of the wasabi the active ingredients start to react with the water that is in the wasabi and the air. These means all the goodies quickly evaporate unless you add vinegar or oil or lemon juice. The only way to get 100% Pure Wasabia japonica is to dry the wasabi without using heat before processing it. New Zealand Wasabi Limited does just that, so our product does not have any additives of any kind. It is 100% Pure Wasabia japonica, which only needs the addition of cold water to reactivate the pleasant rush you get from eating the plant straight out of the stream. That flavour and taste is amazing. Even being out of the water for a day reduces that flavour.

Wow this is a great article. I never knew what that green stuff "really' was. I actually thought it was somthing from Gostbusters or somthing (then again getting sushi in some places in Mahattan - Lord knows what you're eating). I got to go down and see if we can get some fresh Watsabi
