Chetty's Hot Sauces

It’s amazing how a sauce that has such good distribution, great media attention, can still fly beneath the HSB radar. I first found out about Chetty’s hot sauces a few weeks ago from the local television show Breakfast Television. Patrick was on the show giving the Canadian viewers a quick expose of his hot sauces. I immediately contacted him and he was quite enthused to share his sauces with me and his views on the hot sauce industry to the HSB.

Now in my past reviews I have touted and exalted Canadian sauces for their low vinegar quotient. I find that there is a huge difference between U.S. and Canadian sauces and more lately I have been able to discern different sauces just as a wine connoisseur can distinguish certain wines from regions.

Hot Sauce Ingredients:
Crushed Hot Peppers, Vinegar, Prepared Mustard (vinegar, water, mustard seed, turmeric, paprika, spices, natural flavour, garlic powder” Salt

Well Chetty wasn’t shy with the vinegar here. But this is neither an American tasting hot sauce or a Canadian. It definitely has a Caribbean touch but yet maintains originality unto its own.

The hot Hot sauce is well medium hot. Lots of salt and vinegar. Appearance wise they are both a bright orange with the Lime sauce being just a tinge lighter in colour. The sight, aroma, and taste of both of the sauces is very vivid and refreshing.

The Lime Hot Sauce is a lot of Lime, salt, vinegar and pepper. It actually stung the back of my throat. I think under the right circumstances this is a refreshing lively sauce. But I would be careful as to the application of it. But it isn’t the regular lime flavouring that one would be accustomed to when added to hot sauce. This is over the top lime flavouring. Nothing subtle here.

The taste test is forward and simple. Chicken Nuggets and lots of hot sauce. Both these sauces came with limiters but I promptly removed them. The sauce itself is watery enough to warrant them but to get the initial aroma it is sometimes tough with those suckers on.

The flavour of the hot sauce is quote distinct and unique. Nothing ground breaking and original but quite good nonetheless. As stated before there is a sharp vinegar bite and the heat level is right in the medium range.

The lime is all lime and vinegar with a touch less heat than the hot sauce. Not the greatest match for the nuggets but the applications for this can be wide and varied (this would be a great addition to a Caesar). Fish and pork or a splash on a chicken breast would be most welcomed.

If you are looking for something just out of the way of ordinary I would recommend giving these both a shot. The commotion is well deserved in these parts!
