For those of you that like things a little hotter! Like the original, but with a little fire! The addition of the habanero (one of the hottest peppers known to man!) gives Not Yo’ Mama’s Habanero Marmalade a dose of flavorful heat that you won’t soon forget.

Mama Never Made It This Good
I’ve struggled with what to use this marmalade on since receiving it at the Fiery Foods Show - it’s hot but it’s sweet and I wanted to do something out of the norm to give this a good test. So after checking out the recipes on the Not Yo’ Mama’s website, I went off to the market and came back with a nice salmon steak. Now, salmon wasn’t on the recipe list, but I decided to invent my own.

Ingredients:
1 salmon steak
2 tablespoons of Not Yo’ Mama’s Habanero Pepper Marmalade
1/2 can of light beer
I made a foil boat to hold the salmon - then combined the marmalade with the beer and poured over the salmon into the boat. Then I put it in the oven (use a cookie sheet to save the spillage) and baked at 350 for 5-8 minutes.

I served the salmon on a bed of grilled asparagus and dinner was served! Since salmon is traditionally a stronger tasting fish, the heat and sweet of the marmalade stood up to it with no problem. The marmalade added a sweet orange flavor to the salmon, while the Serrano & habanero peppers added just enough heat to make you mouth warm up and your guests notice that their entering dangerous territory without burning their faces off.
Not Yo’ Mama’s Marmalade has created an excellent kitchen addition for any self proclaimed cook. Use Not Yo’ Mama’s to add a lot of flavor and a bit of fire to your next meal and you will be surprised with the response from your family or guests. If Not Yo’ Mama’s can make a self proclaimed salmon hater enjoy my salmon, then just imagine what it can do in your kitchen!

Another recipe from Not Yo’ Mama’s that I’ll soon be trying out - expecially since I just got a fresh bag of walnuts from my grandparents orchard in Northern California.
Spinach Salad with Not Yo’ Mama’s Dressing
Serves 23 tablespoons Not Yo Mama’s pepper marmalade (habanero or mild)
2 tablespoons olive oil
1/8 teaspoon salt
1/8 teaspoon Dijon mustard2 cups baby spinach leaves
2 ounces goat cheese, sliced
1 ounce shaved red onion
2 tablespoons chopped walnuts or pecansIn a small bowl, whisk together the pepper jelly, olive oil, salt and mustard to make the dressing. Heat in the microwave for 30 seconds. Let cool.
Place the spinach in a large bowl, and toss with the dressing. Divide between two serving bowls. Top each one with onions, slices of goat cheese, and sprinkle with toasted walnuts or pecans.

I hate most marmalades, hot or not. I find them bitter. Now’ I’m not saying that Not Yo Mama’s falls into that category, I have never tried them, ever. I’d love to, so samples are appreciated if they’re looking for a Canadian distributor.
Now, if we’re talking jams or jellies, oh hell ya I’m all over them!!
I love Vicki’s Pepper Jam (Ontario made) as well, Grandora Gardens entire line of pepper jellies kick ass!!
Not a sauce no comments?? Nah, it’s just the weekend blahs on HSB. Never that much action on here Saturday and Sunday, people seem to have more time to post when they are supposed to be working during the week, go figure. Buncha slackers!! LOL.

MMMMM now those sound good.
Nice review Nick. Not a fan of Salmon but the Spinach salad recipe looks delish.
You were right Uncle Big the ” Buncha Slackers ” came out of the woodwork.
Kristi, they are good. Along with the red savina green beans, red savina`asparagus, etc. etc.
Paul from FirenSmoke has first dips on them !!
Nick, salad recipe looks great. Try walnut oil in place of olive oil
