 I believe the carrots are used for several reasons, one of which being the carrot and the habanero have complimentary flavors. This means you can use it as a base and still have the habanero come through. A friend of mine grows his own habanero peppers and uses carrots as well. It's one of the best sauces I've had. Even better than Torchbearer, mostly because I believe he makes it fresh, no jarred action. I enjoy the consistency because it stays in place on my cracker or mortadella, dang it's good on mortadella.
You're right about the hotter sauces, man they hot. I do enjoy them though and have been known to use the Fever sauce like mayo (lightly done though) for my sammiches.
Yesterday's mayo? A Wasabi mayonaise, cleans out the sinuses quickly. MmmM.
