Label: The label is wrapped around the standard 5 oz. bottle that is the one true mainstay of the hot sauce industry. A tough guy face is centered onto the label. I know there were rumors before about this, but I have to agree with Anthony that the face does remind me of Bam Bam Bigelow, the late WWF wrestler. The label is set really well with Uncle Big’s appearing in black text to be followed by Killer Hot Sauce below in red text. The description is long but the focus is on “this sauce has the most flavor of the super hots”.
Ingredients:Hatari, Habanero, Scotch Bonnet, Peri Peri, Piquin, Tepin, Birds Eye, Cayenne Peppers, Natural African Oleoresin, Molasses, Tomatoes, Lemon, Lime and Orange Juice, Vinegar, Garlic, Sea Salt, Onion, Herbs, Spices, and Honey (Basically everything is thrown into this one!)
Appearance: The color is reddish brown and there are no dark oil extracts that are visible. Looking closely I can see a few of the spices and there are a few seeds present. The sauces does appear to be smooth when looking through the bottle.
Odor: When opening the cap I am pretty pleased with what my olfactory senses cue on to. I am able to smell a mix of deep peppers with a trace of molasses. There is a slight smell of extract but it is no way overbearing as other extract sauces in the industry.
Consistency: The sauce when administered to my taco is of smooth consistency without any pulp. The deep brown reddish color remains even when poured onto my food.

Taste: At first bit of my chicken taco I didn’t notice much flavor but there was an automatic burst of heat. A few seconds later I was able to taste some of the deep pepper flavor of all 7 peppers that were used for this sauce. The flavor is not bad. If you like hearty rich hot sauce Uncle Big’s provides a great flavor. This is something not along the lines of a Caribbean red sauce.
Heat: For the heat of this sauce I am going on the record and saying that this is probably the best tasting hot sauce I have tried. I have had the Mother of All Hot Sauces about a month ago and not only is the heat of Uncle Big’s stronger, but the flavor is also more defined and pleasing. I know this sauce has been compared to Blair’s Megadeath, in terms of heat. I am so far gone that I would have to try Blair’s Megadeath since it has been a while since I have had it. After eating 6 tacos though with a good amount on each one, I did begin to feel the heat. However, I am not normal anymore so don’t use me as an accurate guideline.
Final Thoughts: If you are looking for a great tasting extract sauce that you can use as either an additive or use straight then this is the one for you! Uncle Big’s is a Killer. There is no other that will provide the intensity of heat with the flavor that it kicks out to your taste buds. I tasted Big’s Pain and I will go back for more suffering.

Nice review Goonie. I’ll have to add this to my list of sauces to get my hands on. I like the sounds of it’s complexity and use of numerous peppers. Not always easy to pull off. On another note, and this is not criticism focused at you or anyone in particular. Whenever I read a review and there is a photo of the sauce being used on something like, in this case a Taco Bell chicken taco, I cringe. As a producer I know first hand what goes into getting a sauce to market and it is no easy endevour. To see a sauce reviewed on a $.79 piece of fast food is almost disheartening to me. It also adds to the notion that hot sauces are only good for disguising bad food, which couldn’t be further than the truth. That of course is one good use for them, but there are so many more uses and applications and it would be nice to see some thought and imagination applied to the use of the sauces we review. It would give the general public a better idea of what hot sauces can be used for and also lend some extra credibility to the sauce itself. Like I said, this is not a criticism pointed at you or anyone else, just my thoughts. Nice review. Cheers!
i have to agree 100%. i frequent the drooling devil shop at least once a week if i happen to be in town, and i havent gone anywhere since i discovered big’s shop without at least one bottle, (two if im gettin low) of uncle bigs killer. great sauce. excellent review as well.

I use to cook all the time… Being alone I am not all into it anymore, but I totally agree with you in that the higher quality dishes the effects are much more enhanced.
GN, I hear yah. I think in this case the removal of the wrapper from the photo may have been enough.

Well, well well, Goonie, I’m very impressed with your review. I had been meaning to get you some Uncle Big’s to sample, but I’m busier than a one-legged cat trying to bury a turd on a frozen pond. It’s seems that you have procured some on your own. Thanks for taking that initiative to make up for my short comings. Just so everyone knows, this is an unsolicited review, we didn’t send the Goon this bottle.
The last time we interacted, I really stomped a mudhole in your review and that may have created some hard feelings, which was unintended, but happened nevertheless. Again, my apologies.
I’m pleased to see that you didn’t let that carry over into a review of my product, thank you for that.
I think your review is bang on and I’m glad you enjoyed the sauce as much as you did. We pride ourselves on the depth of flavour and then of course the heat, as most every maker tries to do. Even though you punish your taste buds in an almost masochistic way (a man after my own heart!), you were still able to give a clear and concise opinion on the flavour, well done. That means more to me than anything.
Just an FYI to chileheads/collectors out there, we are working on our UBK Reserve, which will be three times hotter than Uncle Big’s Killer (yes, three times hotter) and we’ve added some new and interesting twists (Naga anyone?) in the flavour department.
We’ve been working with the Naga for 9 months now and we’ve scoured the earth (Tibet, Africa, Costa Rica, India, England) to find flavour combinations to use with it that we’re hoping will give the sauce a taste that has never been seen in hot sauces before. We think we have finally achieved that.
I will release more information/pics as we get closer to the launch date in May, and of course HSBer’s will get the first glimpse and first dibs on the reserve.
We’re only making 100 bottles in total (our raw ingredients will only allow for that amount for this year’s crop). 25 will be very special bottles, with never before seen packaging, signed, numbered, you know the drill. The remaining 75 will be signed and numbered.
If you’re interested, shoot me a PM and I’ll put you on the pre-sell list. Numbers 1 thru 25 are the special packaging, and the remainder (26-100) will be signed and numbered, the costs for the two types will be announced here on HSB (with Nick’s blessing) in late April.
