This is an old article from 2000 that I happened upon while searching the term “Sultan of Sauce”

Tim Seaver, the owner of Tios Mexican Cafe, calls him the “Iron-Throat Guy,” and speaks of him with authoritative awe. But Tom Starks doesn’t seem impressed with his feat. Wonder how many he has tasted by now? After 15 years of hot sauce loving, I’m sure I’ve tasted over 1,000 hot sauces, wish I’d kept track.

Wow, despite having more than 300 in the home collection…we haven’t tried them all. We’ve been trying hot sauces for years, over a decade at least. I’d estimate at least 200 or more, but who knows? It’s a lot, to be sure.

Unfortunately, I’ll never get to try many of the sauces in my collection, because they’re collectors items and it be a crime to open them. I’ve got over 100 open bottles in the fridge, all of which I use, half of which rank in the top 50 for heat. My all time favorite is “The Man,” which you can get a taste of at Dixies in Bellevue Washington, and is a private brew. I wonder if my 50 habanera salsa counts?
