Okay, I just found it. It wasn't an article, just a little snipet. Gourmet magazine Oct. 07 issue pg. 47 " Houston's love of barbecue is affecting more than cholesterol levels: A 2003 study by Rice University identified particles of cooked meat as a factor in the city's smog problem.
Nick, I forgot to comment on the BBQ bird, THAT commands some respect! So many people have deep fried but few dare to Q. I read an article in Gourmet Magazine that said they actually could detect meat particulate in the air in Houston. Dude! I love Texas! Breathe in some meat for me.

My wife could probably find meat particulates in the air in our house from time to time, usually after I've had a huge serving of beans. :)

Hey Nick:

Please post the recipe if you can find it. I would like to try it.

E - It depends on your brining solution I suspect. I left that out of the story but I used an Apple Cider based brine (there’s a recipe somewhere that I need to find) - and the turkeys weren’t salty at all. I was worried about them coming out as saltsicles, but they were just fine.

Just a folder? Ha! I've got an entire external hard drive (500GB) full of pics! In fact, I'm in the process of upgrading to a 750GB one for my pics and a 1TB one for my music

Nice job Nick! Brining is always the ticket. You can add different seasonings to the brine as well to bring that flavor into the meat.
I must be insane too, I have a whole folder of food photos!
