Yes, I will be there, then heading to AZ after too. It will be my first trip there. You can join the “Boiler Room” and use any nick you want. Also when you post here, you can use your nick as your name.

There’s no links to personal e-mails, but in the boiler room you can send others private messages and e-mails.

i am new to this but i saw the word gator and was interested. my modo is… if you ever have a chance to use gator (especially if they graduated from the university of florida) do it. it makes the world a better place.

Whhoops, forgot to add…. Its easy to write down 6 tomatoes. But 6 tomatoes weigh differently every single time.

Yeah, it also makes a difference on the heat of the pepper. it seems from year to year my Habs vary a little in heat depending on the weather we have over the summer…………….

I’ve seen the same thing.. some times the habs I buy vary greatly in heat Just bought a TON of Red SAvinas so at least the heat there will be consistant for a while.

i suppose it would vary from grower too? i dont grow any, or eat the pepper str8, always in a sauce. i suppose you’ll never be able to get a perfectly consistent heat level. i notice this in my favorite sauces too.

wow, this is quite the pepper lesson. thanx guys. would there be anyway to try and grow a pepper with consistent heat? such as indoors, climate controlled, etc… or is it just the inconsistency of pepper that is the biggest cause?

Yeah I hear ya. My habs got a ton of rain this year(early July) thought I may lose some plants, but now There are so many habs and buds I am going to have more habs than I know what to do with.

Nice problem! My Red Savs have hardly produced down here in Dallas. I my particular part of town we haven’t had any real rain since the end of April an it has been hotter than blazes. It’s killed my yield.

No didn’t dry them they are just starting to turn. I still have dried one that I haven’t crushed from last year……..We will see how it goes may have to venture out and start making hot sauce along with my salsa……

Ahhh… consistent heat. Short answer- no. Chiles are entirely too variable. DK, gator meat scares me, it can be kinda chewy to begin with, not sure how chewy it would be as jerky. i’d be your guinea pig to try a little too if you need one.

All batches are special! I’ll make it with turkey, but we can pretend it’s gator, how ’bout that! Actually, i make this stuff up for personal use all the time. So it’s not a big thing to send out some of it from time to time.

Well, using this jerky gun I have, all the meat is ground, so that helps a lot. Just depends on how it does in the grinder. Gotta get my hands on some gator first though, it’s a long drive to JJ’s!

Made this batch with Black Mamba, quite a bit of it actually. Half a bottle to two pounds of meat. A little Fatalii Fire to liven the flavor and a dash of Defcon 1. I think it turned out great, but hot as he!!

Well, the sauce is only part of it for flavor. I use a generic jerky spice pack to start off (dry spice) to give it a standard jerky flavor, then add to the flavor and add heat with the hot sauce. I really like the flavor of the Fatalii fire, and it is plenty spicy alone. My stepdad said it wasn’t hot enough, so I steppd it up with the Mamba and it worked really well. Now he still says it ain’t hot, but the sweat on his brow says otherwise!

I was very surprised at how easy it can be to talk to so many manufacturers and how open they are. I know you guys are all busy, but willing to give us some of your time too.

As a collector, I really didn’t know much about the sauce side of the business itself, but am quickly learning.

I bought someone collection, and then someone asked if there were any Cape Fear Sauces in it, specifically the Voo Doo, so I assumed it was collectable, then one showed up on e-bay for $200. which seemed a little high to me, but you never know.

I always want to deal with someone who has some feedback, wether buying or selling. But then I had to step back, adn remember I had to start somewhere, and I had that big -0- feedback. So now I trie and take that into consideration when a see a -0-.

The seller of the voodoo had made a mistake in their original listing as to who produced that particular sauce. They corrected the mistake.

Bigshow - yeah the sauce for sale is called Cape Fear Voodoo made by CP specialties. ( they no longer produce the cape fear sauces). Originally the seller had it listed as “produced by Cape Fear Pepper Company” which was incorrect. It was me (Cape Fear Pepper Company)however, who talked with you about obtaining a voodoo sauce by CP Specialties. Hope that makes sence. I’m brain dead right now so it’s hard for me to splain anything.

Well, I know that “chat” is a bad word around here, but it seems there is a lot of real time chat going on anyway. A chat section may be the way to go. A resource site we use at work uses a Java chat and also ties it in with mIRC. The site mainly consists of an archived forum database of user info and the chat. If implemented correctly, chat can work well. I personally don’t like it much, but it may be the best way to handle the off topic chatter. Just my .02, not trying to start another chat debate.

With me the frappr chat is a problem child. I lose the window and the frappr page just takes forever to load. And I have high speed DSL (3mb). It’s a great page, but way to much of a hassle for me to use often.

chat bad…I’ve noticed a common pattern after a topic becomes off topic. The off topic within any thread usually ends up giving birth to a new thread, and usually these threads do better than alot of preplanned topics. Just an observation. Most of the time Nick listens to the chileheads, see a need, fill a need.
I don’t think that this thread drifted too far off topic. Nick has made some very applaudable accomplishments within the chilehead community, but I think the article also is about the industry as a whole. We’re community, and the comments on this thread have been just that. Besides, It’s all Nicks fault that we are all here in the first place…

Not little ‘ol me. I let people hurt themselves. I just get a kick out of watching. I verified with Duff that there will probably be a good number of tin-plated supermen there tonight, so I’ve made up a 16 oz. bottle of “Point Something”. It’s awesome to see the “tough guy” wimper like a kitten under cleats. I get happy chills just thinking about it.
