For all you wine drinkers out there that ever wondered how to pair the right wine with your heat, the San Fransico Chronicle ran an interesting article on the pairing of Rieslings and chiles. I know nothing about wine, can’t stand the stuff myself, but I have much respect for those who are truely into wines and can understand how to properly pair a wine with a meal. But I did learn something from the article:
As a general rule, more chile heat needs more sweetness in the wine.
Seems like common sense to me.
