Green Wings and Ham

This is a salute to Dr. Suess!. I first made a rub with Salt and Pepper and Green Chile Powder. I rubbed the wings and grilled them on a medium heat on the barbeque. I then cooked a couple of strips of bacon and reserved the fat. I added a 1/4 cup of melted butter to the reserved bacon fat. I then used one of my favorite hot sauses. I poured a half bottle of ‘El Yucateco into the butter and fat mixture. All that was left was to toss the wings in this mixture.

These wings were Hot!!!!. They were very tasty. How can you go wrong with bacon fat,butter and El Yucateco.

Ingredients:
1lb chicken wings
1/2 bottle of ‘El Yucateco
1/4 cup bacon fat
1/4 cup butter
salt pepper and green chile powder

Wow - they look amazing. I don’t think I’ve ever seen green chili powder up this way though. Can you suggest a brand name dry rub substitute? These I have to try.

Thanks! H.C. I bought the green chili powder from our local farmers maket. He does not sell over the internet right now http://www.peppahead.com/ There are other sources like http://www.sweatnspice.com/ and Pendreys. Good Luck!

I guess I was prophetic with my previous Sam I am comment about green eggs and ham. Nice looking wings, I would’ve gone with Nuclear Waste Wings because of the green funk look. Sounds like a simple enuff recipe that I can even make it. I only have a 1/2 bottle left of the El Yucateco, so I will have to make less.

Very nice recipe. I love all of the El Yucateco sauces so I will definately have to give these a go around. Man, I am going to be eating a lot of wings in the weeks to come with all of these wonderful recipes!!

This looks like a fun, simple recipe, and the wings look great in the photo. Nice. Time to fire up the grill.
