1st Annual HSB Wing Off - Entry #2

Dear fine judges,

I was so excited to see this contest on my favorite website that I knew I could come up with a perfect wing recipe for you. It was the perfect reason to cook up about 10 pounds of wings, try a few different variations, get all my friends together to have a little taste competition of our own.

Here is the winner - Jay’s Transcendent Wings.

They are perfect with any sauce, including just lemon juice and a sprinkling of kosher salt. We served this batch up with Hula Girl Chipotle and Habanero sauce.

Hope you enjoy. Thanks again for giving me a reason to eat chicken wings for 3 days in a row!!!

Jay’s Transcendent Wings
Ingredients
3 lbs separated chicken wings, tips removed
Enough canola oil for deep frying

Rub Marinade
2 1/2 TBSP black pepper
1 TBSP Garlic Powder
1 TBSP Onion Powder
1/2 TBSP Cayenne Powder

Flour Coating
1 Cup All purpose flour
1 TSP Black Pepper
1 TSP Salt
1/2 TSP Paprika
1/2 TSP Cayenne

Put all chicken wings in a large Zip lock bag. Combine all ingredients for Rub Marinade and pour onto chicken wings, shake until all wings are covered in mixture. Store in the refrigerator overnight.

When ready to cook wings, mix up the flour coating in a separate dish. Preheat oil to 375°F.

Toss wings in flour mixture and fry in batches for 10 minutes each batch.
