1st Annual HSB Wing Off – Entry #1

Mojo
Mojo is my Golden Retriever. He never actually gets any wings but he sure would like some. I cook the wings in a wood fired oven, and then sauce them with a ‘Hot and Sweet’, Home Made, Barbeque Sauce. I start out by rubbing the wings with a rub called “Willy Wonderful Rub”.
Willy Wonderfull Rub
3/4 cup paprika
1/4 cup black pepper
1/4 cup sugar
3 tablespoons coarse salt
2 tablespoons chili powder
2 tablespoons garlic powder
2 tablespoons onion powder
2 teaspoons cayenne

Cook wings in beehive oven
The next step is to fire up my “Beehive Oven”. It is wood fired with Almond wood. The wings are on a rack, and they only take about 10 minutes to cook. The heat is intense in the “Beehive Oven”. I take them out and apply my ‘Home Made’ , “Honey Chipotle Barbeque Sauce”. I smoke my own Chipotle, that’s another story. Coat wings and return to oven for a couple more minutes.
Honey-Chipotle Barbeque Sauce
4 tablespoons chipotle puree — available canned In Latin groceries and some supermarkets, labeled “chipotle in adoboâ€
3 cloves garlic
1/4 cup honey
2 tablespoons brown sugar
¼ cup apple cider vinegar
½ teaspoon cumin seeds,
½ teaspoon salt
2 tablespoons chopped cilantroPlace all ingredients in a blender and blend until well mixed.
Note: If you can’t find chipotle puree, make your own by rehydrating chipotle peppers (smoked jalapenos) — about 4 peppers in boiling hot water. Then puree in blender.

These wings look awesome!! I am hung up between these and D-Nam’s Crunchy Smoked Wings (Belizean Heat Style). Both look so great!! Great job everyone!!

Superb! Tried your recipe and loved it. I like the fact that I can use more or less heat even in tne same batch… I once used your recipe with drumsticks and my dog found a way to get one… He’ll never do it again I think…Those were especially hot…

Good wings. Reminded me of some at a Beaver Creek, CO restaurant The Coyote Cafe. Not as hot as I like, but still tastey.
