This is also the last of the 6 CaJohns Select Puree’s and it is my favourite out of the 3 I have tried.
As like all the purees the ingredients and consistency are all the same:
Ingredients: Fatalii Peppers, Distilled Vinegar, Citric Acid & Ascorbic Acid (Vitamin C), to preserve colour.
To be fair I tried this with just flatbread like all the others. As you can see the colouring is bright yellow. By sight and smell alone you couldn’t begin to guess how hot this puree is. It looks unassuming and the aroma is bright and fresh. I put the standard amount on the plate (about a teaspoon worth) that I have for the others, as I thought the heat level would be little hotter than the others but I was in for a quick surprise.
This is the pitbull of the purees. It bites hard and doesn’t let go for quite some time. Not as hot as the Krakatoa I reviewed but I can safely say that this is way up there in terms of how hot a habanero can get.
After about 15 minutes the heat subsided and I was left with the still pleasant taste of the pepper. It almost has a citrus like quality that comes through very nicely and is noticeable if you can get past the heat.
One thing I was thankful for is that as strong as this puree is, it didn’t leave that acrid after taste that the Serrano Puree left me with. Also this was the thinnest in terms of viscosity and the only one I didn’t need a knife to try and get the puree out of the bottle.
Overall this is a fabulous puree. Amazing heat and a taste that is truly original. While it may not be the perfect condiment for everyday use, I can see this being a welcome addition to any collection and an array of hot dishes. Enjoy!
