Cayenne Peanut Butter Cookies

Wondering what it takes to make a good spicy cookie, I set off on a recipe search. I came across the following Cayenne Peanut Butter Cookie recipe and decided that it would be my first attempt at spicing up a cookie. I settled on this recipe for two reasons, A) its a peanut butter cookie and B) I’ve got a lot of cayenne pepper powder laying around the house.

Ingredients:
1/2 Cup (1 Stick) Butter, softened
1 1/2 Cups packed light brown sugar
1 Cup chunky peanut butter
1 Tablespoon vanilla extract
1 Teaspoon cayenne pepper
3/4 Teaspoon salt
3/4 Teaspoon baking soda
1 Jumbo egg
1 3/4 Cups all-purpose flour

Directions –

    • 1. Place butter in a large mixing bowl and cut up with a dough cutter or two knives. I recommend getting yourself a dough cutter though, the $8 it costs will save you hours of mixing in the long run.
    • 2. Add the brown sugar and mix together until creamy. This will take a considerable amount of time, but it’s essential to cream the brown sugar and butter, this will make your cookie.

    • 3. Add the peanut butter, vanilla, cayenne, salt, and baking soda and cut together well.

  • 4. Add the egg and cut together until smooth.
  • 5. Add the flour 1/4 cup at a time, cutting together with each addition until dough has formed. Take your time with this step, don’t rush.
  • 6. Preheat the oven to 400 degrees F. Grease a cookie sheet.
  • 7. Form the dough into 1 inch balls, flatten between your palms, and place on the prepared cookie sheet, leaving 1 inch between them.
  • 8. Use a fork to press a tic tac toe pattern into each cookie.
  • 9. Bake for 8 to 10 minutes for chewy cookies or 10 to 12 minutes for crispy cookies.
  • 10. Transfer the cookies to a plate and allow to cool.

Now, these cookies are not HOT by any means. The cayenne does add a flavor level that gives them a certain kick ~ this added flavor levels make these quite possibly the best peanut butter cookies I’ve ever had. Even the wife likes this recipe, the cayenne “tickles her taste buds”
