Great Guacamole Recipe
Makes about 2 cups

  • 10-12 fresh tomatillos, husked and washed
  • 2 jalapeno peppers, stemmed, seeded
  • 4 medium avocados, peeled and pitted
  • 2 tablespoons minced onion
  • cup minced fresh cilantro
  • 1 tablespoon fresh lime juice
  • Salt and pepper to taste

Boil tomatillos in a medium saucepan of water, just until tender, about 5 minutes. Drain.

Combine tomatillos and jalapenos in food processor and blend until smooth. In a bowl, mash avocadoes with a fork. Stir in tomatillo and jalapeno mixture along with onion and stir until smooth.

Add cilantro and lime juice, stir to combine. Season with salt and pepper.
