Uncle Bigs Killer Hot Sauce

Hi, let me introduce myself first. My name is Anthony and I hail from Toronto, Ontario. I have been a chili-head for as long as I can remember and the addiction keeps getting worse (better?). I guess my area of expertise is in the super-hot realm. I am willing to sacrifice flavour for heat. After all, with extract based hot sauces you only need a few drops, not enough that will significantly alter the taste in my opinion. Plus I actually like the taste of pepper extract. My comfort level tends to be in 100,000 ~ 300,000 Scoville area but I do like to indulge in much hotter.

So like any good chili-head I have all the essentials in my collection. The Blair’s, the Dave’s the Mad Dog’s what have you but I was looking for something new. Something that I haven’t seen on Sweat ‘N Spice or any other of the on-line stores. Now I am sure most of you aware of the Alberta Crude and Alberta Rain series that, duh, come from Alberta, but what many people aren’t aware of is a another line they carry. This includes a great tasting sauce called The Mother of All Hot Sauces, and my new found favorite Uncle Big’s Killer Hot Sauce. I had a friend track down the sauce in Alberta and I now have it sitting in front of me. A 5oz bottle with Uncle Big staring right back at me. For any old school wrestling fans out there (which I am not but I remember from my youth) he looks just like Bam Bam Bigelow. And as fierce as he was I am sure this sauce could take him down in a second.

Now before I move on you have to see the ingredient list on this sucker:
Hatari, Habanero, Scotch Bonnet, Peri Peri, Piquin, Tepin, Birds Eye, Cayenne Peppers, Natural African Oleoresin, Molasses, Tomatoes, Lemon, Lime and Orange Juice, Vinegar, Garlic, Sea Salt, Onion, Herbs, Spices, and Honey

That’s 8 of the world’s hottest peppers!!!! With extract to boot. I was informed that the Scoville Rating is between 500,000 ~ 555,000. So this is not a sauce to fool around with. What is also nice to see is vinegar low on the level.

I knew the second I cracked open the bottle I was in for a treat. The aroma was fresh peppers. The Hatari and Peri-peri peppers in particular really stood out. I let my fiance take a sniff and she was pretty impressed by it. I asked her if she would like to try some and she was almost about to take a swig of it. I opted that she try a toothpick amount instead. Her reaction was immediate. This was some seriously hot sauce. I wasn’t sure how all these peppers mashed together was going to taste (if I could taste anything at all) so I decided I would try it on a chicken strip. Like I said this sauce is thick and it poured out perfectly onto the plate (about a teaspoon worth) with a nice deep red colour. The heat like my fiance attested was immediate. Fire on the tongue but you could still taste the peppers. The heat surprisingly did not linger for a very long time – which I was kind of thankful for. Finally a sauce I found that delivers what it promises right away and then lets you get on your meal without a box of Kleenex. Painful Yes! Delicious Yes!

For novices out there I would recommend it as a good starting point for super hots as the heat is unreal but lets you off kindly. For those experienced and looking for something outside of the usual, put this at the top of your list.
