Some of you may remeber Henry as the guy that out bid you on the #35 B-99 (on eBay) – making him one of the few people that owns both a B-99 reserve and a 2005 Holiday Reserve. The most interesting item in Henry’s collection has to be the Chile North IceHot Sauces – I’ve certainly never seen them around before.




A word from Henry…
I guess the greatest use of Blair’s sauces is as displays for all of my visiting company to view and admire. Along with the questions, why someone would be inclined to save such a commodity. My answer is that everyone has a passion for doing something different than the average person; this is mine. This all started years ago when I served in the US Army, during which time I was introduced to uses for [tag]Hot Sauce[/tag]. Basically, we used Tabasco (it was an issued item) on everything we ate; the reason it changed the great flavor of well known (Military Chow).After retiring from the service, I used to carry my mini bottle of Tabasco with me to places I consumed food. Over the past years I have grown my own Habanero/Serrano/Thai Peppers and after drying used a blender and make my own shakes of individual named peppers or a combination of these. This was a great experience.
By the way this mixture is great to keep squirrels out of flower beds. (Saves a lot of Hot Sauce).
Then I decided to try the Great Blairโs Hot Sauce; after a few of the bottles I have to become attached to the SUDDEN DEATH, it last forever (just me using), has a great flavor and does well on all the edible dishes that I enjoy.
My collection is primarily of sauces made with Haberano peppers, with the exception when I want a complete set of sauces such as Blair’s. My most prized collection is probably 5 fold: Blairโs Caldera; The Blairโs Reserve AM series; The added LeMillion The Holiday Series (missing Halloween 04).
Lastly I have acquired what I feel is a collectible unlike any other because of the unique bottles that are used, they are shown in photos from โICEHOTโ from Chili North LTD. From left is #001 of 180 the first made in 2000, #003 of 180 of year 2001, #002 of 180 of year 2002, #002 of 360 of year 2003(certificates included) Made only for these 4 years due to the supply of bottle were no longer available. They continued making IceHot with a smaller bottle.

Shoot!!!! I had a chance to get some of those Ice Hot sauces on ebay about a month ago. They were in those same bottles. I guess I should have scooped em up.

Daniel, it’s a bottle of “Light You Up”, by CaJohn’s. It contains Red Savina Hab sauce.
That’s a pretty healthy collection you’ve got there Henry. Any plans on getting an 04 Halloween reserve?
One of those Cajohns light you up bottles just went for over 200 bucks on ebay a week ago.
Some of those CaJohns special bottles are pretty hard to find and can cost a pretty penny if signed and or numbered. There is a signed Sunburst on ebay right now too.

Those special Cajohn’s bottles have caught my eye on several occasions and I’ve only seen a few signed ones. Pretty rare and certainly nice to have in the collection, not that I have any though ๐
How long have you been collecting, Jezza? I’ve only been collecting for about a year now and my collection pales in comparison to the ones seen on here. The unique Cajohns bottles is a side quest of mine too, but as of now I only have 3 of them…none of them signed.
I’m pretty new to actual collecting. I’ve been a fan of hot sauce / food for several years, but only actually collecting for about 9 months…
I’ve a long way to go to get anywhere near any of the collections featured on here, but I’m going on a one step at a time policy. For now my main focus is catching up on the Blair’s reserves, partially because I currently have a distinct lack of space, but primarily because they are such works of art!
That’s the direction I’ve taken as well. As of now, I only have 6 of Blair’s reserves. My problem is funding at the moment. Unfortunately I missed out on some of the presales while away on business, and had to pay for some costly car repairs. Guess I’ll see how my collecting goes after I get my raise next month ๐

Nice collection, and yeh you just bet me out on that B-99. Us Navy lads have some creative uses for the Tobasco as well. I had some Mexican sauce on Saturday. Don’t know what they called it but it was green and it was wicked. The people nearly passed out when I threw the whole bowl of it on my rice and empanada. Feel Alive! 4 more days and look out ALBERKERKEY.

I really appreciate the positive feedback on my display. Ref: Comment #1 (Scott) I contacted a man Steve”Chileman”Carter at ChileNorth, he worked for about a month to locate this set from around Canada(his distributors) and we arrangeed an agreeable cost. One week later I had them. I did see that one on Ebay that was a late 2003.
Mad, I’m not so sure it was Henry who won the B-99.

LOL! Thanks Vic. The shirt is a conversation piece…I think the best part is that a few intellectually-challenged bipedal forms actually ask me if I’m in the program. I tell them, “Of course, once you’re in the program, the gov’t makes you wear the shirt so they know who you are”. Sad part is, they believe me. These people are prime candidates for Soylent Green.
MSK: The boxes to the right of IceHot is TAYLOR’S MEXICAN CHILI; GOURMET HABANERO CHILI. I order this from the WEB. I love to save and use more than hot sauce as you can see by my salsas on the bottom. The great practice is to order 2, save one, eat one.
I see several Dave’s Reserves in there. What years do you have?
On the Dave’s:’98 ’99 ‘2000 ’02 ’03 ’04 ’05, been looking for 2001, I’m not sure if I want to go back any farther since I don’t know when they started.

Nice collection !…on the ICE Hot, you can still buy it here in Canada, although hard to find. The original bottles are long gone, it is packed in normal bottles now….

Eman, hmmmm a DEFCON meat-based sauce. Perhaps reducing roadkill to its original carbon state, and building it back up with the infusion of various cultures, of course using the ancient Defcon transmutation scrolls and texts would be an interesting twist. Imagine that, coating a chicken wing with reformed raccoon and just a touch of the tincture of squashed squirrel. To think, my wife already hates the habanero dust which inhabits every nook and cranny of the house, imagine her face when I start bringing home former living forest creatures who met their demise by their only natural predators these days, Ford and Chevy. Ahhh, wedded bliss.

Unless my memory is fading, the ’03 Ice Hot sold out many moons ago. Production ceased in ’03 because the bottles were no longer available. Whether request go through Steve or not, it’s my guess that any acquisitions will most likely come from other collectors. Although, he would be your best bet.

Henry kindly let me know of this blog and I thought I’d clear up some of the confusion over the Ice Hot LTD edition sauce. We made this product from 2000 through to 2003 (four years) in very limited editions however unfortunately finished it due to lack of the exquisite cobalt blue bottle.
We were able to get a very limited number of the 2003 edition back from a client however these have been snapped up thanks in part to this blog! The good news is that as a number of ardent collectors are interested in previous editions I am personally tracking down former customers who bought the lower number editions to see if they are interested in selling them. Let me tell you guys something. Whether or not you have the collector bottles, you need to get some of the same product in the 5oz woozy. I absolutely love it on salads. I’m even going to try it on ice cream!
