Ahhh… consistent heat. Short answer- no. Chiles are entirely too variable. Chiles can vary in heat from one side of the plant to the other, from one part of the day to the next, and *definitely* from one season to the next. Some variaties are worse than others. Jalapenos are among the worst offenders, Hunkys & Banana not far behind. Habs have been fairly consistent for me, at least compared to others.
There are step you can do to make sure your sauces are fairly consistent though. Quantify, even if by any ol’ inexact method, the ‘ideal’ heat of your sauce and the chiles that made it so. Using that as a base, simply vary the amount of chiles as needed. My ‘Original Finishing Sauce’ originally took 5, 5 gl buckets of jalapeno mash. Last season though, the japs were so hot, I cut it back to 4, 5 gl buckets… after *several* customer complaints 😉
The variability can also be used as a marketing tool- like they say at MicroSquish: that’s not a bug, it’s a feature. Variances from batch to batch are proof that you’re an artisinal manufacturer, using only fresh ingredients, in small runs 🙂

Well, the sauce is only part of it for flavor. I use a generic jerky spice pack to start off (dry spice) to give it a standard jerky flavor, then add to the flavor and add heat with the hot sauce. I really like the flavor of the Fatalii fire, and it is plenty spicy alone. My stepdad said it wasn’t hot enough, so I steppd it up with the Mamba and it worked really well. Now he still says it ain’t hot, but the sweat on his brow says otherwise! 😉

I was very surprised at how easy it can be to talk to so many manufacturers and how open they are. I know you guys are all busy, but willing to give us some of your time too.
As a collector, I really didn’t know much about the sauce side of the business itself, but am quickly learning.

Haahaa, now I’m confused. I didn’t produce those particular sauces. They were made by a co. in VA. Did we email back n forth a few days ago? I’m losing it I think. That’s what happens once you get to be in yer 40’s.

No I don’t think we have. So is that other company out of business? I bought someone collection, and then someone asked if there were any Cape Fear Sauces in it, specifically the Voo Doo, so I assumed it was collectable, then one showed up on e-bay for $200. which seemed a little high to me, but you never know.
So what sauces do you produce? Will have to check them out.

LOL, just remeber John started in the same boat you did I’m sure. I was just talkin to someone about that with e-bay. I always want to deal with someone who has some feedback, wether buying or selling. But then I had to step back, adn remember I had to start somewhere, and I had that big -0- feedback. So now I trie and take that into consideration when a see a -0-.
anyway its nice with ALL the manufacturers, helps us all out.

The seller of the voodoo had made a mistake in their original listing as to who produced that particular sauce. They corrected the mistake. 😉

Bigshow – yeah the sauce for sale is called Cape Fear Voodoo made by CP specialties. ( they no longer produce the cape fear sauces). Originally the seller had it listed as “produced by Cape Fear Pepper Company” which was incorrect. It was me (Cape Fear Pepper Company)however, who talked with you about obtaining a voodoo sauce by CP Specialties. Hope that makes sence. I’m brain dead right now so it’s hard for me to splain anything. 🙂

Well, I know that “chat” is a bad word around here, but it seems there is a lot of real time chat going on anyway. A chat section may be the way to go. A resource site we use at work uses a Java chat and also ties it in with mIRC. The site mainly consists of an archived forum database of user info and the chat. If implemented correctly, chat can work well. I personally don’t like it much, but it may be the best way to handle the off topic chatter. Just my .02, not trying to start another chat debate.
The one thing about the off topic section here is that I always forget about it and find it hard to track. The “recent comments” suggested by Chris may help though. To be honest, I look at the off topic thread when it is posted, but when it drops off of the front page, I lose track of it.
Before it’s pointed out to me, I know there is a link in the list at the top left, but I hardly ever even think to lok over there. It is so small and I have to look for it. The recent comments are so much easier to watch.

There IS a chat already, and no one sues it (the FRAPPR chat).
Plus with chat you can’t go back and read what yuo missed (I think most of the off topic stuff is hilarious)
I think if Nick could add a recent off topic comments (only like the last 2-3) under the exisitng comments, then you will easily be able to see if people are on.

With me the frappr chat is a problem child. I lose the window and the frappr page just takes forever to load. And I have high speed DSL (3mb). It’s a great page, but way to much of a hassle for me to use often.

chat bad…I’ve noticed a common pattern after a topic becomes off topic. The off topic within any thread usually ends up giving birth to a new thread, and usually these threads do better than alot of preplanned topics. Just an observation. Most of the time Nick listens to the chileheads, see a need, fill a need.
I don’t think that this thread drifted too far off topic. Nick has made some very applaudable accomplishments within the chilehead community, but I think the article also is about the industry as a whole. We’re community, and the comments on this thread have been just that. Besides, It’s all Nicks fault that we are all here in the first place… 🙂
