It seems that the HSB gets all sorts of questions these days, some are relevant to [tag]hot sauces[/tag] and hot sauce collecting, some are completely random. Recently a question came in that I can’t answer on my own, it’s more for the hot sauce makers out there.

Would you have any tips on hot sauce manufacturing? I’m trying to get my sauce to market, but need to find a good third party manufacturer to produce and bottle the product. Any info you can share will be greatly appreciated.

The celebrating was overshadowed by the passing of my father-in-law this morning. Life has been a rollercoaster this month. He is in a better place now and we are very excited about the baby comming soon. We just went through all the “guess the date” entries and got that all settled.

N-59 Is multi layered…I would have to go back and check exact but total should be around 7.8 million if combined……Seperate in layers the middle is around 12-14 million..But again I would have to go back verify..I think those numbers are low 2. As I think most of you are aware I do not market my Sauces based on Scoville Units.It is way to confusing to the consumer…..IE A sauce that is certified at 50k can taste hotter than one at 80k based on other ingredients…..I never want people to make a purchase based on Scoville units……With the exception of my reserves as they are marketed as ingredients only NOT to be used straight

Well said brother, besides, there are many factors to the testing sample that can effect the outcome. Chiles don’t stay constant on the same plant, let alone from batch to batch. As with Blair’s products our quality is first.
