CaJohn was kind enough to send in pictures of Heaven on 7, which another reader previously wrote in about as well. I’m thinking I need to go to Ohio for a month or so…

Here are the pics I promised from Chef Jimmy Bannos’ Heaven on 7 on Rush. Bear in mind he has 3 of these restaraunts, and 3 colections! Many old sauces, many collectable ones as well. I couldn’t get to close to the “Wall of Flame” as there were patrons sitting in front of it. Sauces on the lower racks are open game to people who want to try them. Sauces higher are just for admiring. Many old Blair, all of the Dave’s Reserves, and of course, many CaJohns as well. Even the Light You Up as shown in the 4th pic. Great guy and great food. Okay, so the last one has nothing to do with Heaven on 7 - but anytime a chilehead gets a picture with a beauty queen such as Miss New Mexico, it needs to be shared with the world. Miss NM was at the Fiery Foods Show and stopped by to say tell CaJohn that he was the maker of her favorite hot sauce (okay, maybe she was saying that to everyone). But still, the fringe benefits…

I forgot to mention that he has a few of his “own” sauces, thay are on all the tables with a bunch of other sauces. Mostly Figueroa Brother’s & Tabasco. Not an outstanding array of quality. MAD, are you ever going to contact me about that sauce to review?

Question about the forth from the top.
I see a cobra and a Light you up. what is to the right of the light you up any one recognise it.
As well same row over to the left the one with the Heart as a top and the bottle also looks to be a heart too? What is that one.
Thanks if anyone has that info please share. :)

My brother lives in Chicago and works in the same building as Heaven on Seven - this might be the motivation that will make me actually visit him for once! Although I’d probably spend 2 hours after eating trying to identify every bottle in the place. They’d probably have to kick me out!

I would be worried about theft or breakage if that was at my restaurant. Not to mention who would get to clean them all yikes!!! I must say, however, that they sure do look nice on the wall like that.

The bottle to the right of the Light You Up! is indeed a Hot Saucer. Look for a limited re-release of that bottle real soon. The one to the left is the first rendition of Hearts Afire. Jim Campbell has found a few of those with the other stopper. Something he tried when we ran out of heart stoppers, but I decided against putting them out. The Chile Rojo and Chile Verde in the first picture are out of production as well. Those have the plasticised foil wrapings instead of wax. They are a very early edition o bottles. There is one more in that series, it is a chile infused olive oil.

Speaking of the Lava dome. My brothers lava dome has a dark maroon colored wax on it. Only one ive seen with that color wax. He got it a Loooong time ago. How many of that colored wax has been out there Cajohn?? Also thanks for finding me the lava dome from Pepperpalace. I was lucky enough to get one that was signed in black perminent marker. I didnt hink I would get a signed one.

Scott, the Lava Dome was only offered in maroon for a long time. It wasn’t a plan to change colors, more of a shortage of maroon wax. The manufacturer was temporarily out, so we used black. We have evn done some in red. The red was the last of the Lava Domes produced. We havent made that bottle since 2002. Jim C says we have a few in his storage, they will be listed somewhere soon. I don’t know if the Pepper Palace has any more, but I know I signed the ones he had last time I was down there.

Jim and I talked about his “Spring Cleaning” and I know I have a lot of stuff in the corners of the warehouse as well. We will make an effort to get this stuff together and let Nick know just what we have. Many of the bottles will be “prototypes” or just us messing around with options. All items that were a joint effort ( Jim was my packer) will be signed by both of us.

eman, Jim has a light bulb, I don’t have any I know of. I have basically been a pack-rat and I’m sure I’ll find some items I have forgotten about. I know there is some very unique items to be offered. Anything you want signed that you find, I’ll be glad to oblige. Jungle Jim’s near Cincinnati may have some Ligh You Up as well.

On the Light You Up bottles, most had red shrink material, some had black. Again, just shortage of supply, not an intentional change.

I wonder what kind of an insurance policy one would have to have for such a large collection in an restaurant environment. Its one thing to insure your collection with a rider policy to your mortgage insurance or renters insurance as the case may be, but this would be entirely different.

Regarding insurance….I tried to get a rider for mine through my State Farm home owners policy. They would only insure it up to the limitations set for food products. That’s a mere pimple on a ant’s a** for my needs. I’m in the process of trying to find a private insurer specializing in collectibles. Who would have ever thought that I might need to contact Lloyds of London :)

You probably will have to go through a private insurer. I don’t think there are actuarial charts developed yet for the intrinsic value of hot sauces. Wait a minute, anyone feel like starting up a consortium for the insurance of said items?

Really, I was able to get a Rider policy from State Farm. The policy is $25,000.00 and the premium is $173.00 per year. I would glady get more specifics or put you in touch with my agent if you’d like.

FYI, back when I lived in Chicago and went to Heaven on 7 a lot, they used to give you a FREE MEAL if you donated a bottle of hot sauce that Jimmy Bannos did not have in the collection. A challenge yes, but good rewards. (Miss the place now, living in London. Nothing similar here. Bummer.)
