CaJohn's Killer Cayenne Hot Sauce

You know whenever CaJohn hands you something with a twinkle in his eye and a refusal to tell you what it is that it’s going to be hot. The first thing CaJohn handed me at the Houston Hot Sauce Festival was a tiny bottle of Killer Cayenne and encouraged me to try it out. Smell wise, it smelled like pure cayenne pepper. So I went ahead and touched the tiny toothpick to my tongue. Holy cayenne! The heat hit like a 10lb hammer - but more notably the flavor of the cayenne stood up to the heat.

Ingredients: Vinegar, Cayenne Chiles, Sugar, Granulated Garlic, Lemon Extract, Gum, Natural Flavoring.

Neither CaJohn nor Jim C. would reveal on the “secret ingredient” in Killer Cayenne - they are both keeping their lips shut until further development occurs, but they would tell me that they’ve developed a new way to “exploit” the capsicums in the pepper.

I tried Killer Cayenne on a slice of pizza and it held up wonderfully - nice cayenne flavor and a punched up heat. Within one slice, my brow was sweating and my nose was running. But that didn’t stop me from going back for more.

Killer Cayenne is indisputably the hottest cayenne sauce I’ve ever had - quite possibly the hottest cayenne sauce ever. There is no flavor of extract - only the flavor of the cayenne peppers. The heat lingers for a good 20-30 minutes after eating - dependent on the amount you’ve consumed. On a straight to the tongue taste, you’ll experience a immediate upfront heat that builds to a pleasant crescendo. It’s not at the face melting heat level of Black Mamba - but it definitely sticks with you and makes sure you notice.

Killer Cayenne is not yet available on CaJohn’s website but give them a call or send an email and get yourself a bottle of this amazing cayenne pepper sauce. There’s nothing like it on the market - guaranteed.

And look for us to use this process on several other things besides Cayenne ;-)

VERY interesting! I must say! I love cayenne flavor! I must try this if it is as hot as you say Nick W/O any extract flavor! Black Mamba is HOT but the extract flavor kills the sauce for me. I’m very curious to try this! -Lars-

CaJohn let me taste it @ OF, it has much more “kick” than
you would expect from a cayenne sauce, even more heat
than most commercial hab sauces!

Let me say I have this little bottle and it rocks! The taste is great and the punch is perfect. This should be on everyone’s Christmas list.

Oh yea, by far my favorite cayenne sauce. Way more heat than it has a right to. Perfect!

As for seeing how this process works with other sauces, the kicked up Talon (?) CaJohn brought to FMK really shows it off! Hoooooooweeeeee! :D Yes, you know you’re in trouble when the first thing John says when he greets you is “Hey DK, try this!” :lol:
