After months of work and lots of blabbering about what I was going to make, the mildly anticipated Redrum Hot sauces are ready to be unleashed on the unsuspecting public!

Every year I have a garden and grow all kinds of hot peppers, mostly Habanero’s, Orange and Red Savina, but a bunch of other stuff also. This year I had Long Joe’s and Cayannes and Jalapeno’s, Cherry’s, Thai Dragon, Hungarian Wax, Anaheims and a few red and yellow bells.
I took all of my harvest and put them into my smoker and smoked them with Hickory wood for 12 hours, stemmed all the little buggers and made a mash, what a pain in the butt!
I got hold of a bucket of Red Savina Mash from Jim Campbell at Mild to Wild (Thanks Jim!) and went to work on my baby’s!
The amount of work involved in doing this was ridiculous! I have no illusion that i am ever going to be the next great sauce maker, but I wanted to make some cool stuff to share with friends, family and you guys on the Hot Sauce Blog!
I am a chef, so i was able to make my sauce in the steam kettles at work and sterilize my bottles and all the good stuff to make sure my bottling process was compliant with safe food handling processes, (I am certified in food safety and sanitation).
My first plan was to make a “Special Reserve” so I searched the internet until I found some bottles I thought would look special, 13 bottles for the special sauce! Then I bought some french sealing wax. Over the course of several months I got more and more stuff for the project, Little Axes from Australia, Wax Stamps from Germany, Label ideas from friends and a cool Logo from Cabin Pepper, 5 Million Extract and 16 Million crystals from Mike Muso at HotterNell! Bought me some 5 ounce woozy’s and 10 ounce bottles and I was ready to rock!

It took me 7 hours on my day off from work to make the sauces, I started with my “RedRum Original” made 5 and 10 ounce woozys, a few cases each.
The ingredients are: Red Savina Peppers, Smoked Peppers, Vinegar, Shallots, Corn Syrup, Lime Juice, Herbs and Spices.

Then I made BBQ Sauce, took 1/2 hot sauce and half of my homemade bbq sauce recipe and mixed it together.
Ingredients: Red Savina peppers, Ketchup, Vinegar, Corn Syrup, Smoked Peppers, Shallots, Brown Sugar, Molasses, Lime Juice, Garlic, Herbs and Spices.
Now I think I may have gotten carried away, but I then took some of my Hot sauce and added 5 Million Scoville extract to it, bottled my 13 special bottles, 20 – 5 ounce bottles and had a little left over so I made 6 – 10 ounce bottles also.
But that wasn’t enough! I then took about a gallon of my hot sauce, added the 5 Million extract to it AND the vial of 16 Million Crystals to it, called it my “Extra Special Reserve”.



I made a giant 1.5 Liter Bottle of that, but I had some leftover so I made 2 – 10 ounce bottles and 7 – 5 ounce bottles.
Whew! This little hot sauce project was getting bigger and bigger! I decided to wax the tops of all the bottles, finally got a label done that I liked (a whole day just gluing those on) and put all the finishing touches on this morning!
I signed and numbered the 13 Special Reserves I set out to make from the begining, attached a little bottle of Bih Jolokia Powder and a little axe to each Bottle, put the RedRum seal on it and here they are for your viewing pleasure!
I have sent out a couple of unlabled bottles to people from the Hot Sauce Blog during the process and have gotten some pretty good reviews. The sauce has a rich, unique flavor (from my secret ingredient, I love that “Herbs and spices” on the label!) and the BBQ sauce kicks ass! I am going to send nick a bottle of each for review.
I am donating the #1 Bottle of the “Special Reserve” to Jim’s Step up for Charity, it will be in an auction soon from Nick at Sweat N’ Spice.
All the bottles are labeled 2006, I already have my Idea for next years “special offering”! Each year I am going to do something different!

This is a really cool offering! Ed yer a great example of a commited chilehead. I can’t imagine all of the time and effort that you obviously have invested into these bottles. And the best part for me is the fact that I’ve had the opportunity to eat the redrum sauce. Not only can I look at a cool bottle, but I can also relate to what’s actually in the bottle. The contents of the bottle are just as impressive as the looks. First class all the way through!

Hey all! Thank you so much for the AMAZING response to my sauces! I hope you all enjoy them! I am sold out on the Extra Special Reserve and the 8 ounce collectors special reserve. Actually- I’ve been giving it some consideration. The American Cancer Society wants to open a Hope Lodge here in Indy. As they provided the bulk of the witnesses I thought it would be nice to do what I can for them. I thought I might have one more attempt left in me, to try and hit 120K (150K is beyond my reach I think) but after the last few sessions on the machine, I ain’t feelin’ it ๐ I think my knees are pretty well toast. Got to see if my doc will hit me up with ‘the juice’ & see how they feel after that. At least they went for a good cause ๐

I like the red and green theme going on with these bottles, and the unique lid metal cap spring thing. Very unique. Also I love that you have a sauce thats as big as a wine bottle, now thats quality! I would love to

Containing to the industry and the bloggers in general, I want some oppinions:
(This is not a comment at all directed at Ed or anyone in particular but just at the industry as a whole.)
Is noone creative enough to do something else then the wax/resin dipped top? Its been done before, and everyones trying to just jump on the bandwagon, Lets brainstorm how to make a sauce standout more even if were looking at packaging, lets dip it in gold, lets strap kryptonite too it. Lets cork it and make you use a wine corkscrew to open it, lets make it a puzzle that you have to solve before it lets you have sauce, lets make a bottle that you twist the sauce out of, lets put it in a toothpaste tube, lets chrome the cap, lets strap a thermometer to the bottle, lets make it have a glass lid, lets ship it in a chemistry vial, lets, lets, lets, do something different. sorry, im in a ranting mood.But why do all the new sauces being created have to ride on someone elses sucess and creativity.
oh and im gonna get stoned for this comment plus its a tad off topic, but I was under the impression that a reserve was supposed to mean "exclusivity", as in special, or not normal, or rare, or something of that nature.
How many reserves can Blair put out before people other then myself catch on to the fact that every time he puts a reserve out, Your own reserve be it a 2am or 3am or any of his reserves becomes just that much less special. Less exclusive. One or two more reserves and its very unlikely I am going to be able to contain myself any longer. My reserves going to be how should I say... normal and commonplace, and im going to have to open it and eat it.
Stoned as in bong hits of dehrydrated Red Savinas? OR stoned in as you will stir a ruckus and get slammed? Hmmm, me thinkin I better shut up on this one.
My RedRum (regular, 10oz.) arrived a couple of days ago (Thanks, Ed!) and I’ve cracked it open. Awesome sauce! Great flavor.

Daniel, I appreciate your comments. The wax thing however has been around for centuries. The ancients used it to seal the amphora they kept their oil in. I know that its done for effect, but it is also a very effective seal, especially when it comes to tamper evidence which is required by the authorities. The chemistry vial has been done (Doc McNeills’s Final Experiment), the tube has been done (check your nearest Asian market), the corkscrew has been done (Ther original Holy Chipotle bottles, sealed with stinky bee’s wax), even beer bottle type caps have been done (El Paso Chile Company). What it really comes down to is approved sealing methods and the FDA. Those who bottle legitimitly have to follow codes. Certain equipment is required to do certain types of packaging. Not everyone can afford the cost of the equipment. I applaud your rant, but there are boundries to what we can do legally.
Very good questions you raise… As long as the market exists, you will find them popping up periodically. The answers to the questions Nick put forward reveal quite a bit to the motivation of the buyer (collector). It is interesting reading. Thanks again for your comments!

You have the Big Daddy of sauces and all you can say is you want a bottle of Kryptonite? Are you kidding me….. John was to kind with his words with you, If you collect any type of sauce you would see all the rare one of a kind bottles out there, John listed a few but only recieved an ignorant response in return….
John is to humble to list other’s so I’ll help out…. Excaliber, Log Cabin, Lava Dome, O’ My stars, Adam and Eve, Cobra, Sunburst, one of my favorites the light you up which is sauce in a light bulb, mini light you up, lets not forget the CE that he created for ZF…. Here’s a few other’s DC NOS bottle, Hot Pod…. That is just to list a few..
I’m going to stop the rant, because truly you did not do your research before posting…. With your comments, it looks like you where looking for confrontation…
One additional thing, put down the comic book and come back from fantasy world.. There is no Krypnomite, Invisible bottles, seceret decoder rings and such…. Just some very cool bottles if you just open your eye’s and look…

Greetings to all from Africa, Having an awesome time…haven’t found any hot sauce to buy yet, but I am working on it, just found this internet cafe…boy I really needed an internet fix! One reason I used wax as stated was that you have to seal your bottles and I didn’t want to buy a million shrink collars and have buy a heat gun…wax was just easier, and looks better in my opinion!

Nicely put CaJohn, we are using new bottles for our Slobber Sauce that need sealing and are heavily considering wax, not for keeping up with the Jonses but satisfying FDA and the nice clean look.
Daniel, I am also curious on how everyone feels on using the title “Reserve”. Just so happens we are coming out with some hot sauces at the first of the year that will be called “C.P.R. – Candy’s Private Reserve” (named after my lovely wife). I guess I never looked at is as small quantities but more as something special, would be curious what others think. (except Jim C. – you know how them opionated firemen can be)
I bet Jim has enough senority to be off Christmas, not me I have to work 7am-7am.

I think it is up to the market to determine ‘too many’ and there are conflicting signs as to wether or not we’ve reached the saturation point. On the one hand the releases sell out within hours, so- no. On the other hand, I can’t seem to sell them at all on the secondary market, so- yes.

Hi Folks,
I am new to this forum and idea of bottling. My wife is asian makes a hot sauce that all of our friends love. Since she’s sitting at home waiting on her green card and work permit she’s bored. We both thought it might be fun for her to bottle her sauce and try to sell it on the web. If we make 50 cents a year we are more than happy. this is more of a hobby and something to do for her.
Anyway probably owing to too much time spent in the corporate world I’m concerned about food safety and the costs of bottling and packaging. Can anyone point me to some resources that the home bottler/slash tiny home distributor should know or could use? Also I’d love some suggestions on supplies and/or any typical cost/bottle info or metric that people are using.
