I wanted to include a quick word about a sauce I had mentioned briefly in an enchilada recipe in an earlier review: Pico Pica Real Mexican Style Hot Sauce. First off, this sauce is “Mexican-style” in that it is reminiscent of what many would consider a Mexican sauce, yet, it’s made here in the U.S. It’s distributed by Juanita’s Foods, Wilmington, CA, and is widely available at grocery stores (at least here in Oklahoma).
On its own, Pico Pica very good, and for the uninitiated to periodic eater of spicy foods, it has some heat. Its ingredients are water, chile peppers, tomato puree, salt, spices, soybean oil, citric acid, xanthan gum, garlic powder, paprika, and sodium benzoate. Like I said, Pico Pica has a very good flavor; it’s savory and earthy, minus any vinegar “zing” with perhaps very slight fruitiness. As per the ingredients, it basically tastes like a slightly watered down chili base in a bottle. And that’s the only issue I have with Pico Pica. For me, it tastes just a tad too “watery” on the front end. Let me be clear; watery taste, not watery consistency. But again, that’s just my take. Perhaps this wouldn’t bother other people in the slightest, and I wouldn’t want to dissuade anyone from trying this otherwise worthy sauce. But, I think this Pico Pica works best as an ingredient in other dishes where it can play a complimentary supporting role. This may have to do with some of the water base evaporating during the cooking process, and leaving only the wonderful flavors of the sauce. Indeed, Pico Pica worked out really well in my enchilada recipe, and I’ve also tried it in, and on, burritos, and I know it would also be a great addition to tacos, chili, or poured over piping hot cheesy nachos. Try it for yourself; it’s not expensive (around $3 U.S.), and it may just turn out to be a new favorite.
